Butternut Squash Linguine

Ingredients

  • 10 oz Food Club Linguine
  • 6 slices Food Club Bacon, chopped
  • 1/2 cup onion, finely diced
  • 1 1/2 teaspoons fresh garlic, minced
  • 1 1/2 cups butternut squash puree (canned, fresh, or frozen)
  • 1/4 cup Food Club Heavy Cream
  • 1/3 cup Food Club Shredded Parmesan Cheese
  • Food Club Salt and Black Pepper
  • 2 tablespoons Food Club Parsley Flakes

Directions

  1. Cook pasta according to package instructions.
  2. Heat a pan over medium heat and carefully add bacon. Cook for 4-5 minutes or until crisp.
  3. Remove bacon from the pan and set aside. Leave about 2 teaspoons of bacon fat in the pan; drain the rest.
  4. Add onion to the pan and cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds.
  5. Add butternut squash puree and heavy cream to the pan. Season sauce with salt and pepper to taste.
  6. Cook for 3-4 minutes, stirring occasionally, until heated through and thickened. Stir in parmesan cheese and cook for 1 more minute.
  7. Reserve 1/4 cup of pasta water and drain pasta. Return it to its cooking pot.
  8. Place pot over medium heat and add the butternut squash sauce. Toss to combine.
  9. If needed, add pasta water to the sauce 1 tablespoon at a time, until desired consistency is reached.
  10. Roughly chop bacon and sprinkle over pasta. Serve with parsley flakes and enjoy!
