Bursting with Blueberries

Summertime growing up in Nacogdoches meant one thing – the Texas Blueberry Festival. From enjoying the Kiwanis Club’s blueberry pancakes first thing in the morning, to cooking chicken and fish for the Rotary Club’s chicken and fish fry, to sunny afternoons sitting on the brick streets, sipping blueberry lemonade, and listening to live music – the Blueberry Festival has always been one of my favorite weekends of the year. In honor of the 2024 Texas Blueberry Festival on June 8th, we’re highlighting some quick and easy beginner recipes as well as recipes for our more seasoned chefs.

Farm Fresh Blueberry Recipes

Nothing says summertime quite like freshly picked blueberries! Julie Wood, of Wood Blueberry Farm in Burke Texas, has provided us two great recipes to enjoy the tiny fruit's bursting flavor.

Shrimp Summer Rolls

Bring a medium saucepan filled with water to a rapid boil. Add 1 tbsp salt, then add lemon halves and shrimp. Turn the heat off immediately and allow shrimp to slowly poach for 2-3 minutes until fully pink.

Easy Cinnamon Roll Waffles

This mash-up of two breakfast favorites puts a fun spin on things. Top with syrup, whipped cream, and/or your favorite berries for the new breakfast of champions on the block!
