Grilled Dessert Peaches

Ingredients 

  • 4 freestone peaches, halved and pitted
  • 2 T. olive oil
  • ½ cup crème fraiche
  • Fresh raspberries (optional)
  • Fresh mint leaves for garnish (optional)
  • Balsamic glaze (optional)
  • ¼ cup chopped pistachios (optional)

Method 

  1. Preheat a grill to medium-high.
  2. Brush each cut side of peach halves with some olive oil and grill
    cut-side-down for 5-7 minutes. With a thin metal spatula, flip
    the peaches over and grill for 2-3 minutes longer – just until the
    peaches begin to wrinkle and get juicy.
  3. Top each peach half with a dollop of crème fraiche, raspberries,
    a drizzle of balsamic glaze, and a sprinkle of pistachios if using.
    Garnish with mint leaves if using and serve immediately.
