Ingredients

  • 6 cups Food Club Vegetable Oil
  • 3/4 cup Food Club All-Purpose Flour
  • 2 teaspoons Food Club Garlic Powder
  • 1 teaspoon Food Club Salt, plus additional for serving (optional)
  • 1/2 teaspoon Food Club Ground Black Pepper
  • 1/8 teaspoon Food Club Cayenne Pepper
  • 1 large Fresh Harvest Egg, whisked
  • 1 cup Food Club Club Soda
  • 4 Full Circle Market Alaskan Cod Fillets, halved lengthwise
  • 1 1/3 cups prepared coleslaw
  • 1/2 cup Food Club Tartar Sauce

Directions

  1. Preheat oven to 200°; place wire rack on rimmed baking pan. Attach deep fryer thermometer to side of large saucepan; add oil and heat over medium-high heat 8 minutes or until oil temperature reaches 365°. 
  2. In large bowl, whisk flour, garlic powder, salt, black pepper and cayenne pepper; whisk in egg and club soda until smooth. In 2 batches, with tongs, dip 4 pieces of cod, 1 at a time, in flour mixture to coat; shake off excess, gently add to hot oil and cook 8 minutes or until golden brown and internal temperature reaches 145°. With tongs, transfer cod to wire rack and sprinkle with salt, if desired; transfer pan to oven to keep warm while frying next batch. 
  3. Serve cod with coleslaw and tartar sauce.
