Avocado-Lime Dressing

Ingredients

  • 1 large ripe avocado, peeled, seed removed
  • 1/4 cup water (plus more as needed)
  • 1/4 cup Food Club Extra Virgin Olive Oil
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh lime juice
  • 1 clove garlic, peeled
  • 1/4 tsp. Food Club Paprika
  • Food Club Salt and Black Pepper to taste

Method

  1. Add avocado, water, olive oil, cilantro, lime juice, garlic, and paprika to a food processor fitted with a blade. Blend until creamy. Add additional water for desired thickness.
  2. Taste and season with salt and pepper. Store in refrigerator and use within 2 days as oxidation (darkening) will occur.

Optional:

  • Add 1/2 jalapeno, seeded and diced, when processing for additional flavor and heat. 
  • Add less water for use on seafood, tacos, or flank steak.
