Tuna Pasta Salad
Prep time: 10 minutes (plus chilling time)
Cook time: 10 minutes
Total time: 20 minutes
Serves: 6
Ingredients:
- 1 (16-ounce) box rotini pasta
- 3 medium ribs of celery, diced
- 1 large red bell pepper, diced
- 1 cup frozen peas, defrosted
- 2 (5-ounce) cans tuna, drained
- 1/2 cup plain nonfat Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons fresh chopped parsley
- 1 tablespoon fresh chopped dill
- 2 tablespoons Italian red wine vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Method:
- Cook pasta in boiling salted water until al dente, about 10 minutes. Drain and rinse under cold, running water. Transfer to a large mixing bowl. Add celery, bell peppers, peas and tuna. Toss to combine.
- Stir in yogurt, mayonnaise, parsley, dill, red wine vinegar, salt and pepper until combined. Cover and chill at least 1 hour before serving.
