Sheet-Pan Tortellini and Sausage Bake

Ingredients

  • 1 (19-ounce) bag cheese tortellini
  • 1 (16-ounce) bag Food Club Steamin' Easy Broccoli & Cauliflower
  • 4 links precooked chicken sausage, sliced
  • 1/2 cup pesto, divided
  • 1/4 cup Food Club Grated Parmesan Cheese
  • 1/4 cup Food Club Olive Oil
  • 1 tablespoon Culinary Tours Red Wine Vinegar
  • 2 teaspoons water
  • Fresh basil for garnish

Directions

  1. Preheat oven to 450°F. In a large bowl, combine tortellini, vegetables, sausage, 1/4 cup pesto, Parmesan cheese and olive oil. Toss until well-coated.
  2. Spread mixture onto a large rimmed baking sheet and bake for 15 minutes.
  3. Whisk together vinegar and water with remaining 1/4 cup pesto and drizzle over hot tortellini and sausage mixture. Garnish with fresh basil and serve immediately.

Tip: Don’t crowd the pan! If your tortellini mixture doesn’t fit in one even layer on the baking
sheet, then use two baking sheets.
