Fresh Harvest Rice recipes from Donnell Devillier, the owner of Doguet’s Rice Milling:

 

Doguet's Cajun Gumbo-Authentic Cajun Seafood Gumbo

Ingredients:

  • 16 oz. Doguet’s roux
  • 4 quarts water
  • 2 lbs. fresh cleaned shrimp
  • 1 can or 1 lb. fresh crabmeat
  • 1 pint oysters
  • 1 large onion (chopped)
  • 1 bell pepper (chopped)
  • 2 pods garlic (chopped)
  • 2 stalks celery (chopped)
  • 1/2 cup diced green onions
  • 1/2 cup chopped parsley
  • 1 lb. (2 cups) uncooked Doguet’s rice

Directions: 

  1. Dissolve roux in water over medium heat then let boil 1/2 hour.
  2. Add chopped vegetables and cook over low heat for 1/2 hour.
  3. Follow instructions on Doguet’s rice package for cooking rice.
  4. Add all seafood, chopped green onion and parsley and simmer for 15 minutes, or until seafood is fully cooked.
  5. Serve over cooked Doguet’s rice.

 

Doguet's Cajun Gumbo-Authentic Cajun Tasso, Sausage, & Chicken Gumbo

Ingredients:

  • 16 oz. Doguet’s roux
  • 4 quarts water
  • 1 large hen (seasoned)
  • 1 lb. smoked sausage or andouille
  • 12 oz. smoked tasso
  • 1 large onion (chopped)
  • 1 bell pepper (chopped)
  • 2 pods garlic (chopped)
  • 2 stalks celery (chopped)
  • 1/2 cup diced green onions
  • 1/2 cup chopped parsley
  • 1 lb. (2 cups) uncooked Doguet’s rice

Directions:

  1. Dissolve roux in water over medium heat and let boil for 1/2 hour.
  2. Add cut-up chicken, diced tasso, sliced sausage, and chopped vegetables.
  3. Bring to a boil, then lower heat to medium and cook until chicken and vegetables are tender (about 1 1/2 hours).
  4. Cook Doguet’s rice according to instructions on package.
  5. Add green onions and parsley about 15 minutes before done and season to taste.
  6. Serve over cooked Doguet’s rice.

Every year on Christmas evening we gather with our immediate family to just relax after the hustle and bustle of the holidays and enjoy chicken and sausage gumbo with Doguet’s rice and roux of course.


Rice Dressing/Dirty Rice

Ingredients: 

  • 1 pound Ground Beef
  • 1 pound Ground Pork Sausage
  • 1 can Chicken Broth (14.5 oz)
  • 1 can Cream of Mushroom Soup (you can also substitute your other creamy soup favorites such as Cream of Onion)
  • 1 pouch of Lipton Recipe Secrets Onion Flavor
  • 2 cups uncooked Doguet’s Long Grain White Rice

 Directions: 

  1. Preheat Oven to 400 degrees.
  2. Brown the 2 pounds of ground meat in a large cast iron pot or dutch oven and season with TexJoy steak seasoning or Season All.  Drain.  
  3. Add Chicken Broth, Cream of Mushroom soup, Lipton Recipe Secrets Onion Flavor, and 2 cups of uncooked Doguet’s Long Grain White Rice and stir all ingredients until mixed together evenly.
  4. Place top on cast iron pot and place on middle rack of oven for 45 minutes stirring once after 25 minutes.

This dish is often served as a weekday meal at our houses with corn and other fresh veggies, and is always served at Thanksgiving and Christmas with family.
