Chicken Broccoli Alfredo Pasta

Ingredients

For the Chicken:

  • 3 Boneless, skinless chicken breasts
  • 2 Tbsp Food Club Butter
  • 1 Tsp Cajun seasoning
  • 1 Tsp Food Club Ground Black Pepper

For the Alfredo:

  • 3/4 Cup Food Club Butter
  • 1 Cup onions, chopped
  • 1 Tbsp minced garlic
  • 6 oz. Food Club Cream Cheese
  • 4 Cups Food Club Heavy Cream
  • 1 Tsp Food Club Oregano
  • 1 Tsp fresh basil, finely chopped
  • 1 Tsp Food Club Salt
  • 1/2 Tsp Food Club Ground Black Pepper
  • 5 oz. Food Club Shredded Parmesan Cheese
  • 16 oz. Food Club Fettuccine
  • 3 Cups broccoli florets, fresh or frozen

Directions

For the Chicken:

  1. Cut chicken breasts into about small, bite-sized pieces.
  2. In a large skillet, melt butter over low heat. Stir in chicken, Cajun seasoning, and pepper.
  3. Cook until chicken is cooked through and no longer pink in the middle.
  4. Transfer chicken to a plate. Set aside.

For the Alfredo:

  1. In the same skillet, add butter, cream cheese, onions and garlic over low heat. Stir. Once melted, whisk in heavy cream.
  2. Add oregano, basil, salt, and pepper. Whisk on low heat until well incorporated.
  3. Add shredded Parmesan cheese and cook until thickened, stirring often. Add chicken and broccoli florets once desired sauce consistency is reached.
  4. Simmer for 10-15 minutes. Serve over fettuccine pasta. Enjoy!
