Slow Cooker Chicken Marsala
Back to school is upon us and that means fast-paced days and evenings full of after-school activities. Take a little extra stress off your plate with this easy-to-make Slow Cooker Chicken Marsala that will give your dinner an Italian flair while keeping your kitchen cool in the August heat.

Slow Cooker Chicken Marsala
Ingredients
      • 6 boneless skinless chicken breasts
      • 1 tablespoon olive oil
      • 2 teaspoons minced garlic
      • 1/2 cup marsala wine
      • Salt and pepper to taste
      • 1/2 cup chicken broth
      • 1 1/2 cups sliced mushrooms
      • 1/4 cup heavy cream
      • 2 tablespoons chopped parsley
      • 1/4 cup cornstarch
      • Optional: Baguette, toasted and sliced.

Directions
      • Heat the olive oil in a large pan over medium high heat.
      • Season the chicken breasts on both sides with salt and pepper.
      • Cook the chicken in the pan for 4-5 minutes on each side or until golden brown.
      • Place the chicken breasts, garlic, wine, chicken broth and mushrooms in the slow cooker.
      • Cook on low for 5 hours, or until the chicken is done.
      • Remove the chicken from the slow cooker.
      • Whisk together the cornstarch with 1/3 cup cold water.
      • Pour the cornstarch into the slow cooker and stir to combine.
      • Add the chicken back to the slow cooker, turn the heat to high and cook for 30 minutes or until sauce has thickened.
      • Stir in the heavy cream and season the sauce with salt and pepper to taste.
      • Sprinkle with parsley and serve. Optional: Serve over toasted baguette, sliced (as pictured).

Cooking with Kate: Back to School
With the summer heat ramping up the past few weeks, it is hard to believe that the new school year is just around the corner! Turn the back to school blues into back to school bliss with these simple tips to make busy school days stress free.
 
  • Encourage lunch planning. Create a template with your child's name, day of the week, and meal. Complete this every Sunday night before the next week and encourage input from your kids! This also allows for your kids to help pack and prepare meals.
  • Invest in compartmentalized to-go containers. Do you have little ones who struggle to open zipper bags and prepackaged snacks? Make lunches easy by using containers that keep food separate, but are easily opened.
  • Cook ahead and freeze for later. Make a week's worth of meals - sandwiches, wraps, etc. - and freeze until needed. This works great for PB&J or meat and cheese, without the veggies. Wrap each sandwich in plastic or place in a sandwich bag before placing in the freezer.
  • Free yourself from sandwiches. If you dread the thought of making hundreds of sandwiches this school year, try creative ideas such as homemade pizza rolls, cheese and sausage quiche, or ham and cheese rollups.
  • Tame the afternoon hunger. For the after school snacks, store fresh fruit, nuts, veggie straws, crackers or our favorite, Chewy No-Bake Granola Bars (see recipe below), in a basket or clear bin on the lowest shelf in your pantry for easy access.

Ingredients
      • ¼ cup butter
      • ¼ cup brown sugar
      • ¼ cup honey
      • ½ teaspoon vanilla extract
      • 2 cups quick oats (do not substitute rolled oats)
      • 1 cup crispy rice cereal
      • pinch of salt
      • ¼ cup mini marshmallows
      • ¼ cup mini chocolate chips
Directions
      • Lightly coat an 8” X 8” pan with non-stick spray.
      • Heat butter, brown sugar, and honey in a small saucepan over medium-low heat.
      • Cook until melted and sugar is dissolved, about 2 minutes.
      • Remove from heat and stir in vanilla.
      • In a large mixing bowl, combine oats, cereal, and salt. Pour hot sugar mixture over cereal mixture and stir until well combined.
      • Fold in marshmallows.
      • Pour into prepared pan and press down firmly.
      • Sprinkle chocolate chips over top and press them into mixture.
      • Chill pan in refrigerator for 30-45 minutes, until bars are set but not hard. Using a sharp knife, slice into 10-12 bars.
      • Remove bars from pan and wrap individually in plastic or place in snack-size zipper bags.
      • Bars can be stored at room temperature for up to a week.

Ingredients
      • 1 box Betty Crocker™ Suddenly Salad® classic pasta salad mix
      • Water and vegetable oil called for salad mix box
      • 1cup diced red bell pepper
      • 1cup blueberries
      • 1/3cup crumbled feta cheese
Directions
      • Make pasta salad as directed on box.
      • Stir in bell pepper and blueberries.
      • Sprinkle with feta cheese.
      • Refrigerate 30 minutes before serving.
      • Cover and refrigerate any remaining salad.

Summer Sweet Tooth: Grilled Peaches with Pecan Brown Butter Sauce
Everybody knows that what a grill really wants is just some sweet summer fun, and this easy recipe for grilled peaches has every bit of summer and sweet fun you can find.

Grilled Peaches with Pecan Brown Butter Sauce

INGREDIENTS
  • 4-6 peaches, fresh
  • Food Club non-stick cooking spray
  • 1 stick Food Club salted butter
  • 1/4 - 1/2 cup pecans, chopped
  • 1/2 teaspoon cinnamon sugar
  • fresh whipped cream

DIRECTIONS
Slice peaches in half and remove pit. Lightly spritz cut side of peaches with non-stick cooking spray. Place cut side down on a hot grill. Cook about 2-3 minutes. Remove peaches from grill and place in a lightly greased baking dish or sheet pan. Return dish or pan to grill. Cover and continue to cook until the peaches are soft – about 5 minutes. Remove from heat and serve immediately.
 
To make the sauce: In a small sauce pan, melt butter. Continue to cook over medium heat until butter begins to brown and smells slightly nutty. Remove from heat and add pecans and cinnamon sugar. Swirl or stir to mix.
 
To serve: Place 1-2 peach halves on a dessert plate. Drizzle with Pecan Brown Butter and a scoop of whipped cream. Garnish with fresh mint and pecan halves, if desired.

Ingredients
      • 1 can (17.5 oz) refrigerated cinnamon rolls with cream cheese icing (5 rolls)
      • 1 cup powdered sugar
      • 3 tablespoons milk
      • 1 teaspoon vanilla
Directions
      • Spray waffle maker with cooking spray; heat waffle maker.
      • Separate dough into 5 rolls; set icing aside.
      • For each waffle, place 1 roll in center of waffle maker; close lid of waffle maker.
      • Bake 3 to 4 minutes or until waffle is thoroughly cooked and golden brown.
      • Meanwhile, in small bowl, stir together reserved icing, powdered sugar, milk and vanilla until glaze is smooth.
      • Serve glaze over hot waffles.

No-Bake Cherry Lemonade Cheesecake

No-Bake Cherry Lemonade Cheesecake

INGREDIENTS
1 (14 oz) can Food Club sweetened condensed milk
1/4 cup fresh lime juice
1 teaspoon Food Club vanilla
1 tablespoon grated fresh lime rind
1 (8 oz) Food Club cream cheese
1 can Food Club cherry pie filling
1 1/2 cups graham cracker crumbs
1 stick Food Club butter, melted
2 tablespoon Food Club sugar

DIRECTIONS
  • Combine graham cracker crumbs, butter, and sugar in a medium bowl. Press crumb mixture into bottom of an 8” x 8”baking dish. Chill while preparing filling.
  • Place cream cheese in a large bowl & beat at medium speed with an electricmixer until smooth. Gradually add sweetened condensed milk while continuing to mix. Beat in lime juice and vanilla. Stir in lime rind.
  • Pour mixture onto chilled crust. Cover and refrigerate 2 1/2 to 3 hours. Cut into 6 portions and servetopped with cherry pie filling.

Steak Me Home Tonight: Peppered T-Bone Steak Dinner
Skip the steakhouse and savor a sizzling night at home with this simple Peppered T-Bone Steak recipe (courtesy of our vendor partner AngusPride) as well as side dish ideas. This menu makes a flavorful, romantic dinner for two, or it can be easily doubled for a quality family meal.

Peppered T-Bone Steak

Ingredients

A bottle of Alamos Malbec (750ml)

  • 2 T-bone steaks
  • 2 tablespoons steak sauce
  • 4 1/2 teaspoons fresh thyme, minced
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • Recommended pairing (optional): Alamos Malbec

Instructions
  • In a small bowl, combine steak sauce, thyme, pepper and cayenne.
  • Sprinkle steak on both sides with salt. Spoon about 2 teaspoons steak sauce mixture over one side of each steak.
  • Place steaks, sauce side down, on grill over medium, ash-covered coals. Grill, covered, over medium heat for 6 minutes.
  • Brush steaks with remaining sauce and turn over. Continue to grill 4 to 6 minutes or until meat reaches 160*F on a meat thermometer for medium doneness.
  • Let stand 5 minutes before slicing. Pair with Alamos Malbec and any of the below sides.

Healthy Steak Dinner Side Dish: Roasted Sweet Potatoes

INGREDIENTS
  • 2 medium potatoes
  • 1/2 tablespoon extra virgin olive oil
  • 1/2 tablespoon butter, cut into small pieces
  • 1/2 teaspoon salt
  • Pepper, to taste
DIRECTIONS
This recipe starts in a cold oven.
  • Peel potatoes (or scrub well) and trim ends. Cut into ¾ inch thick rounds.
  • Toss potatoes in a large bowl with olive oil, salt, and pepper to taste until evenly coated. Line an 18- by 13-inch heavy-duty rimmed baking sheet with aluminum foil and coat with nonstick cooking spray (recommended: coconut oil spray). Arrange potatoes in a single layer on two baking sheets, dotting evenly with pieces of butter, and cover tightly with aluminum foil. Adjust oven racks to upper and lower middle positions and place potatoes in cold oven. Turn oven to 425 degrees and cook potatoes 30 minutes.
  • Remove baking sheets from oven and carefully remove top layer of foil. Return potatoes to oven and cook until bottom edges of potatoes are golden brown (reversing and rotating pans halfway through cooking time), 15 to 25 minutes.
  • Remove baking sheets from oven and, using a thin metal spatula, flip slices over. Continue to roast until the bottom edges of the potatoes are golden brown, 18 to 22 minutes longer. Remove from oven and let potatoes cool 5 to 10 minutes, then transfer to platter and serve.
  • Optional toppings: If desired, drizzle lightly with real maple syrup, chopped toasted pecans, or fresh/dried thyme leaves, to taste.

Bacon Brunch Burger with Bacon and Eggs
 
Ingredients:
    • 1lb ground beef
    • 8 slices of bacon
    • 4 Fresh Harvest Hamburger Buns
    • 6 Fresh Harvest Eggs
    • 4 slices of Food Club Sliced Cheese
    • 1/2 cup sliced onions
    • 1 head of lettuce
    • 1 large tomato, sliced
    • Salt & pepper to taste
Directions:
    • Cook the bacon on medium-high heat and be sure to drain them after they are done.
    • Combine the ground beef, salt, and pepper; form into four patties.
    • Cook the hamburger patties in the same pan as the bacon on medium-high heat until they are just slightly pink inside.
    • Right before they are finished cooking, add the cheese on top so that it melts.
    • Drain the pan.
    • Fry your eggs to your preference.
    • Finally, assemble your buger with the veggies to your liking!
